Looking to start your first culinary role?

Developed by the renowned industry experts in the catering and hospitality sector, the Commis Chef Apprenticeship is a great way of getting your career started in a kitchen.

A commis chef is the most common starting position in many kitchens and in principal the most junior culinary role. A commis chef prepares food and carries out basic cooking tasks under the supervision of a more senior chef.

  • Delivery/Study method

    A minimum of 30 hours on the job training at the work place per week including a day/block release to study theory at our Uxbridge/Hayes/Richmond or Harrow campus.

    Forms of study include:

    • Knowledge modules learning the fundamental knowledge, through a combination of online learning and practical classroom workshops
    • Level 1 English and maths.

  • What will I learn?

    The primary objective of the commis chef is to learn and understand how to carry out the basic functions in every section of the kitchen; therefore having the opportunity to experience, consider and value each section with a view to choosing an area where they feel most inspired. The learning journey of any chef will vary considerably from one individual to the next, however it is necessary to understand and have experience in the basics that this role provides in order to progress to any future senior chef role.

  • Duration and assessment

    The duration of the apprenticeship is typically 12 months.

    Assessment includes:

    • A work-based portfolio to demonstrate the skills you have learnt at work related projects
    • An end-point assessment. Level 1 English and maths will need to be passed, if not already, prior to taking the end point assessment.

  • Where next? Career/study opportunities

    Progression from this apprenticeship is expected to be into a chef de partie role or senior production chef role.
