Looking to progress in the kitchen? Learn to run a specific section of your professional kitchen, for example, sauces, pastries or fish.
A chef de partie usually manages a small team of workers, which they must keep organised so that dishes go out on time and the work area remains clean and orderly. However, in smaller kitchens a chef de partie may work independently as the only person in their section. Also known as a station or section chef, the chef de partie reports to the senior chef and has a very important role in any kitchen.

Delivery/Study method
A minimum of 30 hours on the job training at the work place per week including a day/block release to study theory at our Uxbridge/Hayes/Richmond or Harrow campus.
Other study methods include:
- Knowledge modules learning the fundamental knowledge, through a combination of online learning and practical classroom workshops
- Level 2 English and maths
- A work-based portfolio to demonstrate the skills you have learnt at work related projects.

What will I learn?
Sample modules and content include:
Culinary:
- Identify how industry and food trends, customer preferences, seasonality, provenance and global environmental factors influence the development of dishes and menus.
Food Safety:
- Know what to look for in ingredients and how to handle and store them to maintain quality, in line with food safety legislation
- Know the food safety practices and procedures to ensure the safe preparation and cooking of food.
People:
- Know how to brief, coach and motivate others positively to deliver high quality dishes and menu items.
Business:
- Identify how the business strategy, customer profile, culture and constraints influence the development of creative, profitable and competitive menus.

Duration and assessment
The duration of the apprenticeship is typically 18 months.
An apprentice will be required to complete an end-point assessment. If the Chef De Partie has not already achieved Level 2 English and maths, they must do so before taking the end-point assessment.

Progression from this apprenticeship is expected to be into a senior culinary chef role.
